I finally had a food win yesterday. I made these awesome bacon breakfast cups yesterday for breakfast.
That was the only one that came out “perfect” looking but the rest were super delicious! I did put my own spin on things:
- I used honey wheat bread
- I used turkey bacon because it was much cheaper than pork bacon and doesn’t upset my stomach nearly as much. I also microwaved the whole package of bacon and used two strips in each cup. I now have half a package of cooked bacon ready to eat in my fridge now.
- I didn’t use any butter but I sprayed PAM on the tin and on the toast. Some of the PAM stuck to the tops of the eggs which made a really cool looking but unfashionable bubble.
- I also used a six count muffin tin instead of eight, but that’s not a huge difference.
This was a very quick and easy recipe and I will make it again. It was also quite filling. Husband said he would have liked his yolks more runny but I liked that it came out between soft and hard-boiled. Then again, I love hard-boiled eggs and he doesn’t. Final Verdict: A+ Will Try Again. Martha Stewart will never lead me astray.
