This is not my recipe but one from Paula Deen. Funny enough, it does not call for any butter…but it does call for a half cup of mayo. The recipe is called Roasted Spicy Mayonnaise Chicken Breasts.

I didn’t have all the ingredients that the recipe calls for so I had to improvise. I was out of paprika so I used chili powder instead and I skipped the lemon zest since that was a failure in grating. I like easy foods with few ingredients since I am easily flustered and rushed in the kitchen. Can you tell that I’m still learning how to cook? Also, that Crock Pot in the background is my new best friend. I decided at the last minute to photograph this so not pictured are the chicken breasts, the most important ingredient.

Mix together a half cup of mayo, a teaspoon of celery seeds, some salt, pepper and chili powder together. I think this could make a nice sandwich spread too. Also, line a baking sheet with tin foil for easy clean up and so the chicken boobs don’t stick to the sheet.

Salt and pepper the chicken tits first and then slather on the mayo mixture. Shove into a 425 degree preheated oven and cook for about 25 minutes or until its done. Eat and forget to take a picture of the finished product.
The chicken comes out juicy and the mayo mix has a nice savory bite to it. The whole thing takes way less than an hour to make, the longest part is waiting for the chicken to cook. This is a great mid-week meal and one that’s hard to mess up.

I don’t think it tasted like mayo. It mostly tasted like the celery seeds. Then again, mayo doesn’t have a flavor for me.
It’s not a true Paula Deen recipe unless there’s 30 sticks of butter in it.
Did it taste like mayo? Brian doesn’t like mayo, and this looks pretty yummy.
